Dough that are made from bread flour will tend to rise better and retain gasses when you bake it, so that your final bread will be larger as well as having better texture.

If you don't have bread flour, all-purpose flour will do too but don't expect your bread to have the same texture quality as bread flour. However, adding a tablespoon of wheat gluten can improve the texture of your bread. Believe it or not, most stretchy dough involves the use of gluten.
